The project, which took nine weeks to complete from start to finish, was a conversion of a former Arby’s restaurant. The new restaurant is 3,457 sq ft and seats up to 120 customers. It is the second Pollo Tropical restaurant in Texas with another one in the pipeline for Katy.
Tim and Jeannette Wyatt operate Wyatt Management. Tony Voight was the project superintendent and FRCH Design Worldwide was the architect.
“Converting the Arby’s layout to Pollo Tropical’s Distinct design was a unique challenge to this job.”

“But our biggest challenge is finding good subcontractors. All of our loyal subcontractors are so busy, we have to be diligent in managing customer expectations and ambitious schedules.”
Wyatt Management uses an online system to facilitate project management, communication and coordination with its subcontractors and store owners.
“This system enables subcontractors to download plans and schedules,” Wyatt says. “It also serves as a job progress reporting system in which our superintendents upload job logs and photos that the owner can access anytime and anywhere.”
Based in The Woodlands, Wyatt Management has one satellite office in Minneapolis and a second one planned to open in Dallas in the fall.
The company has eight full-time employees and is licensed in 20 plus states across the country. – abShare:
